Inspired by Asian dining, this tasty chicken stir-fry is fresh, filling and full of flavour. It’s no secret to us all just how disappointing it is to rustle up a stir-fry at home only to discover it is no where near as delicious as it’s closest rivalry; the local take-away.

With the combination of authentic yet easy-to-get-your-hands-on ingredients this recipe never fails to satisfy and it will abolish those hankerings for the calorific, deep-fried and full-of-bad-fat alternatives. So without further a do, lets dim sum lights and cook a stir-fry that’s good for both your taste-buds and your goals.

Ingredients (serves 1-2)

  • 200g Chicken Breast
  • 1 head of Broccoli
  • ½ Red Pepper
  • ½ TSPN Coconut Oil
  • 1 Lime
  • 2 Cloves Chopped Garlic
  • 1TSPN Light Soy Sauce
  • ½ TSPN Ground Ginger or Fresh Grated Ginger
  • 1 TSPN Agave or Maple or Honey
  • 1 TSPN Chinese Five Spice
  • Sprinkling of Sesame Seeds (optional)

Method

  1. Start by dicing your chicken breast into medium sized chunks and begin rubbing it with the Chinese Five Spice and ginger to marinade.
  2. Chop the broccoli into small florets and slice the pepper into chunky strips and set aside.
  3. Next heat the coconut oil in a wok or frying pan and add the chopped garlic for one minute over a medium heat.
  4. Now add the marinated chicken to the wok and leave for 2-3 minutes before adding in the soy, honey and a big squeeze of lime juice and cook for a further minute.
  5. Add the chopped pepper and broccoli to the pan and give it a good stir, leaving it on heat until the chicken is cooked through and the broccoli tender.
  6. Serve with a sprinkling of sesame seeds or a wedge of lime for squeezing over.

If you’re fond of spice, try adding chopped fresh chilli or chilli flakes in at step 3.
